Happy (Almost) Christmas! I cannot believe we are almost to Christmas, it seems like the Holiday's snuck up on me! I have been thinking about Christmas traditions lately and realized the one tradition I have has been making homemade pecan rolls for Christmas morning. I've had Christmases with my family, and without, but I have always made these pecan rolls to remind me of home and family. I shared a video of my Mom and I making them over the weekend and had some requests to share the recipe. My hope is that someone will add these pecan rolls to their holiday traditions!
I will break everything down by how to make the rolls and then how to make the topping! I suggest making them the night before, so they have time to rise before you bake them. It isn't a hard project, but they are so delicious and probably my favorite family recipe!
The Rolls (Ingredients):
1/4 Cup Sugar
1 Package of Dry Yeast
1 Cup Warm Water
1 Tsp. Salt
2 Tablespoon Margarine
1 Egg
3.5 Cups of Flower
Dissolve the dry yeast into the 1 cup of warm water. Stir until the yeast has dissolved. (Add mixture to mixer or bowl.)
Add sugar, salt, butter and egg. Mix until everything has come together.
Add 3.5 cups of flour, slowly, into the mixture. At this point, you should have a nice dough, ready to be rolled out.
I use a baking mat, mainly because my old countertops liked to stain, when I roll out the dough. Roll the dough until you have an almost rectangle. (Like the one below)
Use table butter and spread it across all of the dough. Then you will add a generous amount of sugar and cinnamon. I typically sprinkle a layer of sugar first and then do another generous layer of cinnamon on top.
This is just my preference, but I roll the dough from right to left. This will make one long row and you will be able to cut the rolls from here. If my description doesn't make sense, look at the picture below!
Once you have it rolled, cut the rolls to where you will have 12 rolls. You will add the rolls to the topping you have made, which we will discuss next!
The Topping (Ingredients):
1/3 Cup of Melted Butter
1/2 Cup Brown Sugar
2 Tablespoons of Karo Dark Syrup
Chopped Pecans - 1+ cups
Take the pan you will be baking the rolls in and put it on the stovetop. Add the butter, brown sugar and Karo syrup until everything has melted. (Don't let it boil.)
Spread the melted syrup around and then add you pecans until the entire bottom of the pan is covered. Take the pan off of the hot burner and this is when you will add the rolls to the pan.
After you add the rolls to the topping mixture, set aside and cover with a clean dishtowel. Leave it covered overnight and they will rise and be ready for you in the morning.
When you are ready to start baking, they should have risen (don't worry if they didn't), set the oven on 375 degrees. When preheated, put the rolls in the over and let them bake for 25-30 minutes. You will be able to smell them and they will smell delicious.
When they are almost done baking, take a cookie sheet and cover it in aluminum foil.
When the rolls are done take them out of the oven, cover the top of the pan with the cookie sheet covered in aluminum foil. Take both pans and turn it over. Take the baking pan off and you will see the deliciousness below! YUM!
These are seriously one of my favorite items to bake and they are seriously delicious! If you have leftovers, put the roll in the microwave for 45 seconds and they will be perfect and amazing leftovers! If you do decide to make these, post them and tag me! I can't wait to see!
